Joe’s Roasted Acorn Squash

1 tbsp Joe’s SuperFuzed Roasted Garlic Herb Oil (shaken up)

1 Acorn squash, halved and cleaned of seeds

So simple and totally yummy. Eat just the squash or fill “the bowl” with your favorite leftover meat, quinoa or bean salad, diced veggies…unlimited options!

Directions

Cut the ends off of the acorn squash so it has flat ends. Cut it in half crosswise. Use a large spoon to scrape out the seeds. Sit squash on ends (face up) in a roasting pan or cast iron pan. Rub inside and cut edges with Joe’s Oil. Cover with tin foil. Roast for about 30 minutes until soft.
