Roasted Poblano Chili Pineapple Tomatillo Salsa

1 pound tomatillos (about 6 medium), rough chop

½ cup roasted corn, fresh or frozen

1 cup pineapple, rough chop

1 cup diced red onion

1 Tablespoon fresh parsley, chopped

1 Tablespoon fresh cilantro, chopped

1 Tablespoon fresh mint, chopped

½ teaspoon salt, more to taste

Juice of 1 lime (around 2 Tablespoons)

Directions

Remove the husks from the tomatillos and rinse well. Rough chop the tomatillos and pineapple. Set a skillet over medium-high heat, stir, and spoon Joe’s SuperFuzed Roasted Poblano Chili Oil into your skillet. When the oil is hot, add the tomatillos, onion, pineapple, corn, and salt. Cook, stirring occasionally until everything starts to char, 5 to 7 minutes. Once charred, add lime juice and fresh herbs. Season with salt to taste.
